Azorean Sugar Cookies (Bolachas de Acucar)

Delicious recipe for Azorean sugar cookies, or Bolachas de Acucar. This is a simple & easy Azorean recipe from the island of Sao Miguel which is a wonderful treat for those with a sweet tooth like myself. They are perfect for enjoying with some tea or coffee, just try not to eat them all in one sitting! These are really easy to make so try them out and tell us what you think!

*Makes 24 Cookies*
1 cup sugar
3 tablespoons butter
2 tablespoons cornstarch
2 eggs
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1) Preheat the oven to 325 degrees Fahrenheit.
2) In a large bowl, stir together the cornstarch and sugar.
3) Add the butter and mix well. Add eggs, one at a time, mixing well after each addition.
4) Combine the flour and baking powder; stir into the sugar mixture until a dough forms.
5) On a floured surface, roll the dough out to 1/4 inch thickness and form them into circular shapes with a cookie cutter.
6) Place cookies on to a greased baking sheet.
7) Bake for 7 to 10 minutes in the oven, until the cookies are done.
8) Allow cookies to cool for a couple of minutes.
9) Serve and enjoy!
